How To Make The Best Rice Pudding Ever!

Jack Scalfani only makes this for the holidays. Here is the recipe:
Rice Pudding Recipe
1 ½ cups long grain rice
4 cups water
6 cups milk
1 cups sugar
2 eggs
1 Tablespoon vanilla
1/8 tsp cinnamon

--Boil rice in water till water is gone.
--Add milk to rice and cook on low flame till thick.
--add sugar to rice and cook on low flame till thick.
--Beat eggs, vanilla, drop of milk and cinnamon.
--Add egg mixture to rice and cook till thoroughly blended.
--Put in bowl and sprinkle with cinnamon.

Note: recipe can be cut in half or doubled.

  • MINE is simple - one cup rice, one cup sugar, half gallon whole milk, 2 cinnamon sticks, peel of one lemon, pinch salt. Put it all in a big pot, bring to boil, lower heat and stir stir stir stir stir until rice is cooked and mixture slightly thick. Remove cinnamon sticks and lemon peel. Add a splash of vanilla. Pour in custard dishes, sprinkle with ground cinnamon, chill.

    YES!!! This is my second time using this recipe! I am happy to have finally made the perfect rice pudding after an embarrassing amount of years. I found that using medium grain rice gave me the texture that I was looking for, but the egg was the secret to getting that pudding-like consistency! I have tried using egg in the past but It has always failed miserably. My rice pudding is chilling in the fridge now! I still get bits of cooked egg in mine, but oh well!

    I usually don't comment but... YouTube food videos are the hard work of Chefs, Home Cooks, Grandmas and sometimes kids. When you see the measurements listed and watch the video, most of the time it's a basic recipe that can be tweaked to your liking. Stop dogging the hard work of the YouTube star. Adding your tips of things like "raisins are a great addition " to the comment section is the proper way to tell the viewers that like raisins to try it. << end of rant>> RICE PUDDING ON! Hehehehe

    This is basically the same recipe I use. I like nutmeg as well but that's personal taste. One thing I recommend is keep 1/2-3/4c of milk out of the pot and mix that with the egg. It helps prevent curdling.
