I modified the instructions very slightly (I don't like raisins in my pudding, so listed them as optional). Hope it helps! Thanks Mike for a great comfort food recipe! Leftover Rice Pudding Ingredients • 1.5 cups milk • 0.5 cups milk • 1.5 cups cooked rice • 0.33 cup sugar • 4 black cardamon pods (green will also work) • Pinch of salt • Optional – 0.33 cup raisins • 1 egg, beaten • Cinnamon • 1 Tbsp butter • 0.5 tsp vanilla extract Steps 1. Add 1.5 cups milk to saucepan. Add rice, sugar, cardamon, and salt. 2. Heat over medium-low heat, stirring constantly for about 15 to 20 minutes. Mixture will thicken as rice absorbs the milk. 3. While mixture is heating, prepare remaining milk by adding beaten egg and mixing 4. When only a few minutes remaining, remove cardamon pods and add (optional) raisins. 5. Add a few tablespoons of the hot mixture to the cold milk-egg mixture and stir. This will prevent the egg from coagulating when added to the saucepan. 6. Add the tempered milk-egg mixture to the saucepan and stir. 7. Sprinkle in cinnamon, to taste. 8. Cook, stirring constantly, for final 2 minutes. 9. Remove from heat, stir in butter and vanilla. 10. Server warm or cold.

    OMG, here it is. I knew if I kept scrolling, (which I don’t want to say how long) I’d find the easy, stovetop recipe I was looking for. With all the components I was looking for. “EGG” butter, whole milk. And BAM!! I have a delicious labor intensive rice pudding recipe. But I needed something quick for leftover rice. I was too lazy to dig the cardamon pods out of the back of the cupboard, and I tempered my egg. But it’s creamy, beautiful with the egg and vanilla and butter. I can’t wait for it to cook.     Wow I’ve always made the stovetop version from scratch but I had a lot of leftover rice and was watching to see what I could do with it and saw rice pudding. So I decided to try it I’ve done before but it was never together like rice pudding it tasted separate like rice in sweet milk but I found your recipe and figured I’d try it and it came out just like yummy rice pudding and it came together perfectly and taste great thank you it works and I will use for all my leftover rice from now in

  • After 20 years in the Navy, I came to love their rice pudding, often set out at mid-rats. Last night I made your recipe using Silk Nearly Milk (1-1/2 cups) and Silk Heavy Cream (the final 1/2 cup) because I’ve become terribly lactose-intolerant. It tastes WONDERFUL and I want to thank you, my Navy mate.
