This Thai beef noodle soup recipe is legit. Inspired by the traditional Thai shophouse style, this is ‘last meal’ kind of food for me. The umami, savoury, aromatic beef broth is such a winner, and the braised beef is meltingly tender. Pile it together with noodles and you have an all-time unforgettable soup. And the beef bits you see in the list? They’re optional. If some parts like the liver or tendon are not your thing, that’s totally OK. I promise you it will still be delicious.

    I spent 1 year in Thailand in elementary school. Every morning I had some kind of noodle soup in the canteen. The broth was magnificent. It wasnt't quite dark and it tasted like coriander. I have been trying to recreate this flavor, find this soup to no avail, put excessive amoutns of cilantro in my broth but it doesn't even come close. I hoped this might be it, but I don't think so :( Although I must say this noodle soup looks mouthwatering.

    I tried making this recipe and it was delicious!!!! I didnt boil for 2 hours since im hungry and my portion is small but it still tastes amazing. I love you marion ❤️

  • Although your soup looks tremendous, I think making it is more labor-intensive than a lot of really fancy dishes. That is a deal-breaker for me.... As a soup just gets thrown together where I come from!🎉❤

    jalepeno pickled peppers and an array of chili sauce and maggi sauce! dry peppers too

    I’d probably use beef tongue instead of the liver or tendon. I think that would add a great flavor and texture.

    For some reason I am thinking that you meant to say Chinese cilantro or cilantro leaves, not celery. Am I wrong?
