This creamy rice pudding is not only an easy gluten free dessert; it's also the perfect way to use up the leftover rice you might have lingering in the fridge. And if you want turn this simple rice pudding into a holiday dessert you can top it with pumpkin butter and whipped cream.

    Hi Colleen, I did it all at once in March of 2011. I have MS and was pretty ill so I went gluten free in hopes of improving my situation. After a few months I saw enough improvement to remain committed to the gluten free life.

  • OMG!!!!!! This is just like the rice pudding my mother used to make 50 years ago. I can't wait for the pumpkin butter. This is definitely one of my Thanksgiving deserts for my kids. Mark, I've made it with brown rice and Stevia, it tastes the same but it's not quite as thick as with the white rice, but I'm sure you'll like just as much, take it from an old lady who also lost and kept the weight off (but only 50 lbs.) Great video.
