I see so many people preparing potatoes for frying that miss a crucial step. After peeling/slicing/dicing, SOAK THEM IN COLD WATER. I prefer to do 2 soaks, a shorter one after a longer one. Soaking draws out extra starch, which holds water, so when they fry, they get crispier, and less "heavy" with oil.
