This breakfast is absolutely delicious! I've already made it several times with different veggies. I recently made the Greek sheet pan chicken with loads of extra veggies so I could use the leftovers to make these sheet pan eggs. I added a bit more garlic while warming the veggies up on the sheet pan, then added arugula and spinach to the egg mixture before cooking. DELISH!

I have made the Mediterranean sheet pan eggs and its Delicous!! You wont regret making it. When I warm it up, I put in microwave 30 seconds or so and put a paper towel folded underneath the piece I am reheating. I make my toast at same time and add Basil Pesto on toast and a bit more of feta. Sometimes I add Shredded cheese too! Great sandwich mmm!!
