Frittata recipes are my favorite for an easy, impressive meal! This healthy, veggie-heavy version puts spring greens front and center (hello leeks and asparagus), and has a sprinkle of fresh herbs on top. Frittatas are a great way to use up in-season produce and they're as easy as cooking up the veggies, pouring in beaten eggs, and baking until perfectly fluffy.

I’ve made this twice now for dinner because we love it! ❤️ First time I made it I didn’t have frozen peas - substituted frozen chopped broccoli and it was delicious! Thank you for this recipe - it’s definitely a keeper and so easy to make.

Don’t forget to save the tops of the leeks for stock. I wash them then put them in the freezer until I need them. I’m new to your channel and love it. Next week we are tackling the WHOLE 30. I’m a little worried but your ideas have helped. 😁
