I am so excited for you to join us in the kitchen and spend the day with us! We are getting the most amazing breakfast, touring a camper, shopping at Sam's club, giving you a haul and making the most delicious, must try casserole recipe!!
Rice:
1 cup cooked rice
1 packet of taco seasoning
1/2 bag frozen corn
1 can drained and rinsed black beans
1 small can of enchilada sauce
"Chimi Changas"
Rotisserie chicken-shredded
Add enchilada sauce
rotel drained
top with enchilada sauce- bake in the oven at 375 for 15 mins
take out and top with cheese
bake for 10 more minutes

WOW!! You're so not kidding. That dish really does look "BEAUTIFUL" and that casserole looks sooo "DEEE-LICIOUS". A must try for sure. I live alone, so I cook for one/two, and always try and cook with intentions of having leftovers for lunch and dinner if I can. And left overs of this casserole will be YUMMY for sure.
