The best meatloaf is really easy to make from simple, everyday ingredients. Ground beef is mixed with onion, herbs, and savory flavors, then topped with the tastiest glaze that goes beyond just ketchup.

I love this classic meatloaf because it's easy, moist, filling, hearty, naturally gluten-free (with oats!) and just like my mom used to make. Serve it with creamy mashed potatoes and roasted vegetables for a cozy, comforting dinner the whole family will love. Oh, it's also great for meal prep!

01:51 Mix all of the ingredients together in a bowl.
03:15 Form the meatloaf in a casserole pan, or place it in a loaf pan.

    Oats work perfectly! I have used rolled oats for years but now I whiz them in the food processor to make oat crumbs for a finer texture. Half ground beef and half ground turkey works great too.

    Oh, this is so nostalgic! My husband had three specialties: pot roast, Bolognaise sauce, and meat loaf. It's as if you had watched him make it! No one else we knew used oats, and I think they give it such a lovely open texture. Catsup & Worcestershire sauce, perfect. His secret, though, was his 'kitchen sink' additions. A couple of lonely mushrooms? A grated carrot? Half a red pepper forgotten in the veg drawer? But the most memorable was the night he tossed in some leftover crushed pineapple - it was absolutely, surprisingly, delicious. Thanks, Lisa!

  • Hi Lisa! I made this last evening for dinner. I haven’t made meat loaf for years. I like to eat a primarily vegetarian diet but my husband was recently diagnosed with low iron so, in addition to supplementation, I’ve been using red meat again, occasionally. I followed the recipe exactly and it turned out perfectly. My husband and adult daughter’s reactions made my day. I own your cookbook, have been a subscriber to your videos for quite a while and really enjoy your presentation and content. I can always be sure things will turn out just as they’re supposed to.
