Crispy, tasty, home fried potatoes, seasoned to perfection and filled with caramelized onions. Home-fried potatoes are my go-to side dish whenever I make a big brunch early weekend afternoons for friends. I love them so much and this recipe is as close as you’ll get to down home southern home fried potatoes.

  • They were excellent. Second time I made them I fried 6 strips of bacon first, and used the fat from that to fry the onions and potatoes, then added the crumbled bacon back in at the last minute, and put some shredded cheddar cheese on top. It was the best camping food ever.

  • TIP: Before boiling your potatoes, slice the peel around the perimeter of the potato, not too deep. After the potatoes are boiled and cooled enough to handle the peel just slides right off. No scraping! :)

  • I just wanted to give you a shout out and say that the way you cook was exactly the way I was taught since I was 7. My parents didn’t believe in wasting anything and that it was really cool when you talked about using left over grease from other meals, and that will definitely enhance the flavor (I myself always save bacon grease as it can almost be used in anything). I went to culinary school in my 40s and was continuously being yelled at and harassed by my instructors using the methods that I was taught while growing up but what the food snobs that cook for the rich continuously forget is that the majority of people that go out want something that tastes like what momma used to cook instead of some upscale foolery.   • I can honestly say I have never seen fried potatoes made this way before. Typically in the south we just peel the potato, and onion if using, and cook in cast iron with bacon grease. If you put a lid on them they steam and eliminates the need to par boil. Haven't seen the use of sugar before either. I do however use season salt or I will use Tony's Creole seasoning. The potatoes get crispy and they don't fall apart but keep their shape. BUT, since I do enjoy trying new things I will give this a try. I won't deny I am skeptical though. But hard to refute the claim of being the best if you don't try them! ;)

    My mother in law made these and I fell in loveeee , like I could eat these all day just by themselves. I’ve always made home fries but could never really get them soft 🤦🏽‍♀️ but she made them one day and mixed it with eggs omg it was delightful 😋 .
