This cake is another recipe for the Black Forest that has been requested a lot.
Actually, I uploaded a Black Forest video a long time ago.
So this time, I made it mousse cake rather than the normal recipe.
I layered chocolate mousse, cherry jelly, and mascarpone mousse, and then topped with chocolate mirror glaze.
Oh, it's really delicious.
For the cherry jelly, I used the delicious Italian organic frozen cherries I had.
Compared to ripe cherries, it is sweet and sour. Ripe cherries were used only for inserts.

Ingredients
♥︎ chocolate mousse
2 yolks (Please measure it to about 32g.)
12 g sugar
50 g milk
70g Dark Chocolate (Callebaut 57.9%)
110 g whipped cream
2.5 g gelatin
♥︎ cherry jelly
160g cherries (both frozen or raw cherries)
50g sugar
10g lemon juice
1.5 g gelatin
♥︎ mascarpone cheese mousse
45g milk
40g sugar
4g gelatin
95 g mascarpone cheese
135g heavy cream
♥︎ 1 Chocolate Genoise sheet cut into 1.5x14

It is 54% Callebaut Dark Chocolate.
♥︎ Clear acrylic mousse ring
Made to order on the Internet. In the video, it was written as 15cm, but frankly, the inner diameter was 14.8cm.
It was almost the same size as a 15cm mousse ring, so I could use it. You can find and order acrylic pipes on the internet.
