    Bird eye chilli is also an Indian chili as its grown and consumed in the Northeast side of India. As for the cooking Oil the most preferred oil for us Indian is Mustsrd Oil,Ghee & Coconut oil but it depends on the region ad well.

    I come from a Southern state in India and even though Bird Eye Chillie may not be native to India it can be seen locally and used in our dishes like chutney and sometimes as a marinade for fish or while cooking mussels

  • When Uncle Rodger said, usually people saute the onion before blending, to get rid of onion flavour. Omg, i jumped. How he know that?😳

    well there is a light version of butter chicken with only garam masala, nutmeg, javitri(mace /nutmeg skin) , green cardamom, red chilly in yogurt, butter, tomato,onion, garlic, ginger, cream gravy. the heavier version we make has it all. even turmeric. it is used both in marination and gravy. additional spices include black cardamom, cinnamon, fennel powder. the gravy additionally includes makhana(lotus seed), magaz(pumpkin seeds) and cashew paste. in normal restaurants no one will put cashew paste coz it is costly, pumpkin seeds +lotus seeds give the same texture. and most restaurants dont saute onions they boil them with tomato, pumpkin seeds and lotus seeds, blend them and then cook the gravy in butter/oil. we brown the onions first at home though. gives a better taste.
