That's why she is showing us how to make Pesto that not only TASTES more interesting but also FEELS more interesting. This broccolini mint pesto is a flavor and texture bomb, with roasted almonds, blanched broccolini, and savory pecorino. Don't believe us? Try it yourself....


INGREDIENTS:

PRODUCE
1 bunch (10 ounces) broccolini
2 very large bunches mint (2-4 ounces)
2 garlic cloves

PANTRY
½ cup almonds, divided
4 oil-packed anchovies
½ cup olive oil, plus more
kosher salt, freshly ground black pepper
1 tablespoon white wine vinegar
12 ounces of any kind of short tubular pasta

DAIRY
3 ounces pecorino romano cheese

  • I actually just made a version like this for a party because I have a ubiquitous amount of invasive mint; however, I made mine with peas, walnuts, and scallions, (in addition to garlic, lemon juice, Parmesan, and olive oil). Was quite refreshing served cold.

  • My favorite summer sandwich to make is with focaccia, mint pesto, chicken salad, mozzarella, and arugula. Let me tell you , this sandwich is THE BOMB on a hot day.

    Looks tasty. Pesto means to "to pound" or to crush in a mortar
