  • I am a canner. Using fresh lemons may be okay for a quick consumption refrigerator jam. BUT, in order to SAFELY water bath can shelf stable jam, you need to use bottled lemon juice. Each fresh lemon has a different acidity and PH. You may not have enough acidity and PH in your fresh lemon to prevent botulism. Bottled lemon juice (like the ReaLemon brand) has the appropriate acidity and PH. Without this acidity and PH you need to pressure can the jam to make it a SAFE shelf stable product. In my opinion pressure canned jam doesn’t turn out the same as the water bath canned jam. With that said I’m so happy that you have so many wonderful figs. Your finished jam looked delicious.
  • Hey Janey ❤ The jam looks delicious 😋 and I’m sure your cute girls enjoyed 💕 Tips for next batch: 1- cut smaller for faster cooking. 2- Adjust sugar based on your first trial. 3- wait till completely cooled off before putting in jars, this will keep the jam from the condensation and extra moisture, because the moisture content ruins jams. Will stay good longer in the fridge. Love you all!

    When it comes to poms, blocky walls are a must, and the flower end will start to curl inward when they are at their peak of sweetness. I like to leave them on the tree as long as possible. They keep better on the tree - at least until it rains. Enjoy harvest season!
  • Here’s a thought. Just close your eyes for a second, now picture yourself in the garden in the South of France. You’ve just picked some figs. Put them on your table on the deck and assemble some cheese and a baguette. Voila, a meal!!! Enjoy 😊

    My recipe came from a 94 year old lady and it was her mother's recipe; so well over 100 years old. 4 cups figs (cut in pieces), 3 cups sugar, 2 cups raisins, 1 cup chopped pecans, and 3 or 4 slices of lemon (remove seeds and puree in blender). I sometimes use Real Lemon juice instead. In a large pot add figs, sugar, raisins and lemon. Boil until real thick, stirring constantly. Add nuts last. With jars and lids hot, fill and seal as usual; then turn upside down for several minutes. This will help the jars seal. Makes 5 - 6 1/2 pints.

  • My daughters mother in law makes strawberry freezer jam. My husband trades her crappie fish for it. Yes My husband has always fished. We call it strawberry heaven. It's so delicious.   • I was happy to see you roll your lemon before you juiced it. I also put my citrus in the microwave for 10 seconds and then roll it and then juice it!

    I ❤ Pomegranates! Several houses in my childhood neighborhood had them. That was Southern California San Gabriel Valley (east of L.A.).

  • I have found that if you microwave citrus for 20 to 25 seconds it creates twice as much juice. It really works.

    My pomegranates are ready late October in your area. I have 3 trees. I wait until the skin is barely cracking. The trick to opening them without making a mess is to cut a square around the flower end very close to the flower. Then pull off the flower (what was the flower). Then score lines from top to bottom. They open around the segments. Pomegranates have a pretty star shape if you were to slice it between the stem end and flower end. I’m sure I made no sense but you can google it. 🙂
