1 can Condensed Milk (397g)
25g Caster Sugar
75g Golden Syrup (or corn syrup)

OH.MY.GOODNESS!!!! I made 2 pans of these today. I will admit that whisking each batch of caramel for about 25 minutes each was wicked because of arthritis. But...was worth every swish!! Came out looking exactly like your photos!!! I'm overwhelmed. EDIT..Is very dangerous now because I just learned how INCREDIBLY EASY it is to make shortbread! YIKES!!

Warning ⚠️ When making the caramel mine turned out really watery don’t be alarmed this is normal after 20mins of constantly stirring it will turn out thicker and more caramelised Hope this helped!!💖

I loved the method that you used to do the shortbread as it is a nightmare to pat down I thought the lemon meringue cake was amazing last week , I like the idea of burnt butter . I would probably make it like a smoked burnt butter lavender shortbread with salted caramel and a caramelised ruby chocolate top. You make things look so easy 😃

Took me a few attempts with the caramel, but if I start the timer at 20 minutes as I light the gas under the pan, then stir on a low rolling boil, take off at exactly 20 mins, It's absoloutlky perfect!!

I made this today, substituting some leftover clotted cream I made for about half the butter in the shortbread. Oh yum! A Christmas-worthy triumph. Thank you, Sally.
