Just purchased a property that has a bunch of Hawthorne trees so I'm going to have to try this recipe. As a beekeeper though, it hurts to see the honey boiled like that. I may try a small batch like that, but by heating the honey up that much, you kill all the natural enzymes and nutrients in the honey. It might be better to simmer down the Hawthorne puree with the lemon juice until you have a nice think, almost dry paste and then once cooled, mix with good raw honey. If you get the moisture content way down on the puree, the honey shouldn't ferment and, if stored properly, it should last a long time.

I harvest the Hawthorne buds every spring, right now, for my heart medicine

That honey looks lovely, I’ll certainly be doing it, but to preserve my honeys good enzymes I’ll simmer just the hawthorn juice down and then add to honey. 💕

In Ireland, that superstition still lasts, a motorway down to Cork was moved a few meters to the left in order not to cut down an ancient Hawthorn about 10 years ago. Sceach Geall in Irish, means Bright Tree….
  • Hello , i just moved to a beautiful rural area in the mountains of New Hampshire, USA. Today walking my dogs we found several hawthorn trees loaded with berries and picked loads of them. Thank you for this perfect video!

Beautiful tree !! Had no idea that it was that attractive in fruit & had that kind of longevity record.

I love the hawthorn! ❤️ Made my first hawthorn ketchup last fall and it was so good. (Especially nice for me as I don’t like tomato ketchup!) Good for our hearts literally and figuratively.

Some lovely new ideas to preserve haws. Thanks. I make infused vinegar and a tincture with vodka...was also considering a jelly but honey seems much healthier 💚🌱💚
  • Before I even got 20% of the way through your video I had to subscribe based on your energy alone.
