I have the Fuji Jari 2.3. I can not say enough about how great this bike is for the price. It does everything you can throw at it. Reynolds tubing is amazing too. Super comfortable on rough downhills. It climbs like a champ. On the road, I can hit 65 km/h on downhill road sections and it feels rock solid. What will I change as needed? I will swap out the Tektro single to dual piston brakes and the rear derailleur for a grx400 with a clutch. So many handy mounts and easy to put water bottles, mudguards and racks.

I think you missed out on a few more independent smaller companies on your list. Such as... The Poseidon X - comes with a super light 6061 aluminum frame (amazing internal cable routing you'd expect only on much more expensive bikes), 2x10 microshift drivetrain, full carbon fork, a mess of bottle and rack mount points and all of in at $699.99 delivered!! Don't like the specs ? The frameset only running $299.99 for the frame, headset and full carbon fork, means you can build your own. No, I don't work for Poseidon - but I did build up one for cheap with a 2x9 sora groupset, 11-34 cassette, FSA Omega 48/32 crank/ BB and Tektro DM-550 mech disc brakes, riding on Sunringle aluminum Wheels and 650c x 45 Kenda Quick 7 tires. All told about $650. I don't think the value to cost on some of these entries comes anywhere near that - especially with some of the lower Claris components I see in the "under $1,000" price tier. Great list, but there are more options out there. Just my 2 cents.

Unsure why you mentioned the Jamis at all as you provided no comment on it other than the price. I've been researching Jamis vs Jamis, and I'm really leaning Jamis because of the build/price value....not to mention the through axles.
