Stainless steel pans are incredibly versatile and durable pieces of cookware, but are not a popular choice when it comes to searing a steak. While many may reach for a cast iron skillet to cook a steak on the stove, you can cook an equally delicious piece of meat in a stainless steel pan with the right technique. We enlisted Anthony Vitolo, the executive chef at Emilio’s Ballato in New York City, to show us how he makes a perfectly cooked steak in a stainless steel pan. All you need is your steak of choice, some salt and pepper, butter, and a stainless steel pan.

    This doesn't seem right, burning the butter as you sear, and basting burnt butter back on? Start with using clarified butter/avocado oil/whatever high heat tolerant fat you want to sear it and it won't burn, and you get a better crust too. Save the butter for the end to finish/baste steak before it burns or at a lower heat. I just ate steak this way tonight, finished it with thyme, garlic, and butter, it was great and not burny.

    Had friends over for steak and cooked them (the steak, not my friends!) in my stainless pan using your method. Added carnalized mushrooms and onions on top. They were blown away! Delicious! Thanks a lot!!
  • Woof. You should wait for the pan to get really hot- when you drop water into it- it should bounce around the pan, tiny balls of water, that’s the secret with stainless steel. Also, ghee would be better so as not to burn, add butter close to the end. Lastly, season higher and more evenly, after patting meat dry(super important).

  • Ok this is probably gonna be the last time I'll watch a food insider video but i just wanted to say that this is a way to cook a steak but it is not ideal at all. To get an high enough temperature to sear a steak properly without overcooking the inside, the milk solids in the butter are going to burn. A stainless steel pan is nice because it conducts and holds a lot of heat which would be good for another fat like oil but in the case of normal butter it's just going to burn. Ik i didn't put a meme or anything i just didn't want somebody to try this and then be disappointed when it doesn't taste good

    Please, no one follow through with this and make a steak like he does. You never use butter to sear a steak- or any meat for that matter. Unless it's clarified butter, only use butter to finish off a steak. Otherwise, Itll turn out burnt and blackened like his did. Also, he didn't mention patting the meat dry, which is essential to get a decent crust on any meat. I'd suggest looking up reverse searing, dry brining, and other methods for the perfect steak
