Ray you can actually eat while using a shield, first use shield in left hand then with you other hand hold nothing. While using shiled scroll to some golden apples. Sorry for my bad english hope it helps

You can actually force someone to hold up their shield. It's called using a repeater with arrows.

You made a mistake. The berry bushes is slower than you state, you stop moving when you take the berry bush damage... do the same berry bush test in survival not in creative and you'll see takes longer to do the same distance between survival and creative.

This prank is brilliant because you can force your friends to run your AFK farms for you, and I have a solution to the problem that your friend won't hold a shield to make it worse on themselves. They will hold the shield if you have a dispenser (filled with arrows from one of the previously mentioned farms) shooting arrows down the tunnel at them.

When the speed is 0.000m/s, can't you just use F3 mode ? Your coordinates have like 6 degrees of precision iirc.
