Mother’s Peach Pie

3/4 cup sugar
3 Tablespoons cornstarch
1 cup boiling water
1 (3 ounce) package peach-flavored Jell-o
3-4 cups pealed and sliced peaches
1 baked pie shell
Whipped Topping

Combine sugar, cornstarch, and boiling water in a saucepan. Cook over medium heat, stirring occasionally until thickened. This will take approximately five minutes.

Removed from the heat. Add the peach gelatin, mixing well. Cool until lukewarm.

Wash, peel, and slice peaches.

Add peaches to the gelatin and pour into the pie shell.

Refrigerate, allowing the pie to set up for several hours. Slice and serve with Cool Whip, if desired.

    Tip for peeling peaches... Boil a Dutch oven of water. Dunk peaches in for just 2-3 minutes. Peach peel comes right off. I usually use a paper towel to help my fingers get the peel off and you don't lose any of the flesh of the peach. ❤

    LOVE Peach Park! We have gone there for decades. They absolutely have the juiciest and most gorgeous peaches. Makes awesome peach pies, peach cobblers, and homemade peach ice cream!

    Looks delicious! I agree, I think a scoop of ice-cream would be good too. I grew up in California but was born in Gastonia and still have relatives there. Growing up, I remember hearing my mom mentioning a family with the last name of Cheryl. What a coincidence. 😊
