Ingredients and recipe:
470g pork loin
Cover with plastic wrap and use a meat tenderizer
Slice into the edges of the meat
Pour 1tbsp cooking wine into the bowl
Add 2tbsp soy sauce
1tbsp oyster sauce
Add salt
Add black pepper as well
3tbsp corn starch
1/2tsp baking powder
Mix well
Set aside for later
Chop 1 cucumber into quarters
Cut out the middles
Halve each strip
Chop the cucumber
Chop 20 cherry tomatoes
Add to the container
Chop 1 purple onion
Chop 25g fresh parsley
Pour 2tbsp olive oil on top
Mix well
Add salt and black pepper
Squeeze lime juice on top
Mix well
Refrigerate for 30 minutes
Add 60g all purpose flour to a bowl
Add 40g potato starch
3/4tsp baking powder
1/4tsp baking soda
Add 2g salt
Mix well
Pour 90-100ml cold water in the bowl
Mix well
Pour 1tbsp vegetable oil in the bowl
Mix well
Set aside for 10 minutes
Chop 1 eggplant
Pour vegetable oil in a pot
Boil until the temperature is 340°F/170°C
Dip the eggplant in the batter before putting in the oil
Repeat with the other eggplants
Half an hour later
Pour vegetable oil in a pan
Medium heat
Fry for about 3 minutes
Flip over and fry for another 3 minutes
Repeat with the other piece of meat
