They're the offal and entrails of cows, chicken and other animals, and it makes for delicious tacos. Think tacos made from animal tongue, eyes, tripe, lungs, stomach, intestine, brain, udders, uterus and testicles—and these are some of the juiciest and most flavorful parts of the animal.

I just tried cow cheek tacos for the first time last week I got to saw they were delicious, its getting your mind past the fact your eating parts of an animal you werent raised to appriciate 😊
