Super Crunchy Glazed Apple Fritters

How to make the best Crunchy Apple Fritters.

Here's what you'll need:
2 cups all purpose flour (250g)
1 tbsp sugar (15g)
1/2 tsp salt (3g)
1 tsp instant yeast (3g)
1/2 cup milk (125ml)
1 large egg
2 tbsp unsalted butter (24g)
HALF-COOKED APPLES:
1 tbsp butter (salted or unsalted will do)
1 and ½ cup diced apples (honey crisp or granny smith)
1 tbsp sugar (15g)
1/2 tsp cinnamon powder (1g)
a pinch of salt
1 tbsp lemon juice
½ tsp vanilla extract
GLAZE:
2 cups icing sugar (240g)
1/4 cup milk (60ml)
1/2 tsp vanilla extract
OIL for frying

1. In a mixing bowl, mix together flour, sugar, salt and yeast.
2. Add milk, eggs and butter. Mix until incorporated.
3. Knead, slap and fold until smooth, about 3-5 minutes.
4. Cover for 40 minutes. Set aside.
5. Half cook diced apples with butter, sugar, cinnamon powder,
salt, vanilla and lemon juice for 3 minutes.
6. Set aside to cool down completely.
7. Transfer the proofed dough to a lightly floured counter. Place the filling and fold until homogenous.
8. Roll out dough. Divide into 6 large size or 12 medium size.
9. Place in a pan lined with parchment paper uncovered. Let it rest for 20 minutes.
10. Fry over medium heat 2 minutes each side or until golden.
11. Let it cool down a bit on a wire rack.
12. Prepare the glaze by mixing icing sugar and milk.
13. Dip each fritter on sugar glaze.
14. Let it rest until glaze sets.
15. Serve and enjoy!
