My father, who was born in 1915 and was raised on a ranch in Mexico, used to talk about making tepache. It always sounded disgusting to me. I'm now 61, and I finally realize the wisdom in making these old recipes.

I wash my pineapple in a deep basin filled with baking soda and water let soak for 10 minutes and then hand wash.

You can also plant the pineapple top and grow another pineapple plant. It will take about 2 years to grow a new pineapple. If you live in a cold climate, just bring it inside when it starts to get cold.

Tepache is very forgiving and simple to make; just pineapple skin and core no need to dice it, water and piloncillo aka panela and that's it.

Great video, Mary. I use regular old refined cane sugar or brown sugar because I can't be bothered buying what I don't have. I also use plain tap water straight out of the tap, again because I can't be bothered. No problems caused by either in the fermenting. End result with spices is like street tepache. Edit- forgot to add - if you want a house plant, don't chop off the greens. Instead, give it a good strong twist off, strip a few leaves from the bottom to expose a leafless base of an inch or two. Doink it into potting soil in a handy pot and water it into the center of the plant. Easy. Hardy and not fussy.

Great video. I would like to add that in Mexico we usually don t put Chiles on tepache. We use piloncillo, if you can find it in your latín store, give it a try, you'll love it. Important: this beverage is not for diabetics, please avoid it.

My grandmother from the Colombian coast would make this at home (no cinnamon but will try it)and my Dad would go crazy for it. We kids preferred Pepsi. But I learned how to make it now that Im 67 and I love it.

Question. It's awfully hard for me to trust the cleanliness of purchased produce. Do you wash or rinse off the pineapple before using? Is it ok to rinse it and let it air dry and sit for a couple of days to pick up the yeast and bacteria naturally occurring in the air? I want to mention, I preordered your book when first announced and have been over the top thrilled with it since the day it arrived. As I have told so many people, you are my number one go to for traditional cooking skills. I'm so grateful you are here for us.
