Teriyaki Tofu Rice Bowl: Teriyaki Tofu Donburi, asmr & vegan / 照り焼き豆腐丼

(Recipe follows) This pressed tofu has a meat-like texture enclosed in a flavorful crust, this rice bowl is plant based and vegan guaranteed to make all your food wishes come true. Even Gordon Ramsey can't complain. ;)

This serves two people.

Per one pack of firm or extra firm tofu:
- 1 pack tofu
- 1 cup of sliced carrots
- 1 cup of sliced onions (or something in the onion family such as leeks, scallions, shallots)
- 1 cup of cauliflower or broccoli florets
- 1 cup of cooked sweet potato or kabocha or squash(You can substitute whatever seasonal vegetables you have on hand.)

Marinade
- 1 tablespoon soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin

Teriyaki Sauce
- 1 tablespoon light soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin
- 1 tablespoon sugar

Crust
- 1/2 cup starch (potato or corn starch)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1 cup liquid for dipping (water, plant milk)
- Bread crumbs (optional)

Slurry
- 1 tablespoon starch (potato or corn starch)
- 1 cup liquid (water, stock, or konbu dashi)


Finishing (optional)
1 tablespoon sesame oil



Marinade
1. Freeze the tofu overnight.
2. Thaw the tofu.
3. Put the thawed tofu under weight to press out the remaining water.
4. Cut the tofu into cubes or triangles.
5. Mix the ingredients of the marinaded together in a bowl or bag and add the tofu.
6. Leave at least 30 minutes up to a few day in the fridge or freeze.
7. While the tofu marinates, prepare all your vegetables.

Breading
1. To prepare for breading the tofu, mix the 1/2 cup cornstarch with all the spices and set aside.
2. In a separate bowl (from the starch) add your liquid.
3. If using, put the bread crumbs in a separate bowl.

Slurry
1. Prepare the slurry by adding 1 tablespoon of starch to the liquid. Mix and set aside.

Teriyaki sauce
1. Make the teriyaki sauce but combining the soy sauce, mirin, sake, and sugar and stir to dissolve.

Making the teriyaki tofu
1. Strain the tofu from the marinade and gently press out the liquid or put a weight on the tofu for 5 - 10 minutes.
2. Dip each piece of tofu into the starch mixture.
3. Dip that piece of tofu into the liquid.
4. Dip that tofu back into the starch OR into the bread crumbs.
5. Set aside. When all are ready, add oil to a pan and fry the tofu in the hot oil until brown, about five minutes. Alternatively, you can bake them in the oven at 180c/350F for 30 -40 minutes till light brown.
6. Add fresh oil to the pan, cook the vegetables in the oil in the order of cooking time. Here, carrots go in first, then cauliflower, then the onions. Because the sweet potatoes/pumpkin are already cooked, they go in last.
7. After all the vegetables are in the pan and mostly cooked, add the teriyaki sauce.
8. Bring the liquid to a boil and cook for 5 minutes.
9. Add the tofu.
10. Add the slurry. The slurry will thicken everything. It will take about 2 - 3 minutes. At this point, it is done.
11. You can finish with a tablespoon of sesame oil, if you like.
