  • Yummy, I love potato and egg salad, I've never seen it made with carrot and cucumber, though! Interesting. We make it with potatoes, cut in cubes and cooked till soft, not mashing them. Then add chopped boiled eggs, onion, bell pepper, pickle relish, a little mayo and mustard, mix up and taste. I like mine with extra mustard though lol. I'll have to try it with cucumbers and carrots now!!

  • Carrot top greens are so good, I've never heard of them being toxic, I grew up in a farm and we never wasted any part of the harvest. Broccoli leaves, radish leaves, pumpkin leaves, pea leaves. Many of the green leafy parts of the plants are edible and tasty, as well as extremely nutritious. Micro and baby greens from seedlings and baby plants are really flavorful and tasty too. If you're unsure what to do with them, just throw them in a mixed greens salad, or add them to soup or pasta. Any way is good, honestly. โœจ
