Love coconut cakes, but this recipe is special and I’ll have to make it when the family are down next. I’ve been using John’s cake recipes for a while as he doesn’t disappoint.

I made this and it's wayyy too sweet. I would suggest to put 1 cup of sugar in the cake mixture instead of two cups. You can always adjust sweetness with the frosting. Apart from that, the cake texture came out very well.

I haven't cooked in a long time but after seeing the coconut cake recipe and the lemon curd recipe I decided to try to make it! The cake is out of the oven and looks very good. I've made the lemon curd for between the layers and will make the frosting in the morning and put this coconut cake with lemon curd between the layers together. So far I am so impressed with the ease of the directions and with the video it was a breeze to make. I am so happy with the results. THANK YOU! ❤

Yes Please the Swiss meringue sounds so good. I would love that recipe. I also have used a whipped cream coconut frosting for a cake that is super light and tasty. I can hardly wait to try this. I just made apple fritters this evening with my grandson. They turned out great and we had a great time. Thank you so much.

Just finished making this cake. I am not an avid baker, but it turned out really well. Wasn't hard to do. The taste test ia yet to come tonight. Well, I did sample the icing, and a crumb or two of the cake "accidentally" came off while I was icing it! Absolutely delicious.
