Ingredients:
175g / 6½oz Self raising flour, If using plain or all purpose flour add extra 1½tsp baking powder
120g / 4½oz Granulated sugar
175g / 6½oz Vegetable or Sunflower oil
4 Large eggs
30g / 1oz Desiccated coconut
1tsp Baking powder
1tsp Vanilla extract
¼tsp Salt
Jam and extra Coconut for topping

I have also experimented by adding chopped mix nuts with desiccated coconut and it comes out very lovely, full on and very delicious.This is my family best cake. I never get tired of baking it for birthday and thank you gifts.

    Hi, thank you so much for uploading this recipe. Ive made it twice, one with almonds and one with mixed fruits. Its amazing, so light and fluffy, i used coconut oil instead of veg oil. My hubby loves it. Its a great recipe, cant wait to try more of your recipes xx

    Hello. Thank you for your recipe. I've made it today for our coffee/tea time. It turned out very good! soft and moist. I reduced a bit quantity of sugar and oil, and add more shredded dry coconut and diced fresh coconut meat, they're giving more texture in the cake. The whole house smell good! Have a good day John!

  • Thanks so much John for this recipe. Now I can bake without a mixer. I used virgin coconut oil instead, added some milk and my cake was amazing. Your banana bread recipe is next.

    I followed your recipe yesterday and it turned out really great! My husband and I enjoyed the cake so much. I used coconut oil instead of vegi oil, and I put coconut flour instead of desiccated coconut (I doubled the amount - put 60g instead of 30g just because I love coconut taste and as an experiment, and it turned out nicely!). I will definitely use your recipe again! Thanks for the great recipe!
