Welcome to the crazy world of Minecraft, Mint. Now, I know the game seems a little out there, but I think you'll really enjoy it. Just make sure you don't become addicted to it. Dah, who am I kidding. Out of everyone, you don't have a track record for an addictive personality. It's all good.

Since you asked for mod recs, I think one of the best modpacks for Minecraft, even if it can be a bit overwhelming if you're used to vanilla, is Better Minecraft. For one thing, it's very easy to set up; for most launchers it comes bundled as one package, and if you have a server you don't have to deal with finicky mod version differences. Secondly, it adds a ton of stuff that makes exploration - Many, many new biomes (for the Overworld, the Nether and I think also the End in a sense) with wildlife to go with them (e.g. Biomes o' Plenty) as well as revamped generation (Terralith); - a lot of new mobs (e.g. Alex's Mobs); - in-depth cooking with new ingredients and farming mechanics (Farmer's/Crabber's Delight, Delightful); - new dimensions you can create portals to (The Aether, Twilight Forest, Blue Skies); - so, so many new kinds of dungeons and strongholds with new items and maps/ruins to lead to them and so on. Plus a whole lot of details like masonry and carpentry workbenches to refine stone and wood, "twigs" like pebbles and... actual twigs, etc etc etc. Plus almost everything interacts, so you can go to the Aether and bring ingredients over to cook on your stovepot together with stuff you found in new biomes, for example. Now with all that said, since things can get very overwhelming very fast, the modpack also comes with QoL improvements you might not 100% like such as an autogenerated map/minimap, being able to craft a compass that leads you to the nearest biome you select since there's so many (Nature's Compass), plus a couple other things that might seem like they trivialize the game (e.g. cooked food is extremely filling to the point it's almost criminal to eat anything else, you can craft sacks and backpacks to add slots to your inventory and cages to trap small animals, etc.). But IMO those come bundled specifically because the scope is so vastly expanded the game would become unplayable without them. Sorry for the long comment, but I felt like both pros and cons needed to be expressed if I wanted to provide an honest recommendation. Either way, thank you for the comfy Minecraft stream. It's something I'd been sorely lacking for a while now. :_heart: (Armadillos are so cute, I want a plushie of one of those with curl-up action.)
