    I have to disagree with the soaking sink in parallel being a poor design, in fact I think them in parallel is superior to this. but it would require smart grabbers, but it'll be a much smaller foot print and would have the dishes come back to the front. so the way I'd have it is i'd have the dirty dish rack at the very top of the serving counter. grabber -> soaking sink, then smart grabber with dirty dish as the filter into the next soaking sink, and then keep going. till the end, now the soaking sinks will all fill up with dirty plates first before they get cleaned, so the dirty plate needs to travel to the end before they get cleaned. now you can have normal grabbers pull off the soaking sink and thus this will only pull clean plates so no need for a smart grabber, and have normal grabbers in between each grabber to direct the flow of where it should go. and you can have it either keep going forward or go backwards to where it came from. in this case it can go back to the serving window and then have a dish rack wherever you want. what is even better is if you are playing on a very large map, they usually have 2 or 3 wide corridor, since this design is a 2 wide modular design, then it works perfectly for those areas and it can be shipped back into the kitchen. I'd say give it a try and you might change your tune about it
