Ingredients & tips
Corn tortillas
Toppings- chopped white onion, cilantro, lime

3 pounds beef tongue
1 litter of water (4 1/2 cups of water)
1/2 onion
3 garlic cloves
3 medium bay leaves
1 clove (spice)
1 tsp black pepper (or peppercorn)
1 tsp salt (Himalayan)

Spicy salsa
25 chiles de árbol
2 Roma tomatoes
1 roasted red bell pepper
1/4 medium onion
1/2 Tbsp Salt (Himalayan)

1. Wash tongue in 1/4 cup vinegar+ 1/2 Tbs salt- Let rest 10 mins- rise- and add to your instant pot
2. Add your tongue + spice to the instant pot
3. Pressure cook 40 minutes- let cook in pressure and extra 20 minutes- release steam
4. Remove the top layer of the tongue as shown in the video
5. Chop and continue to serve as desired

    We raise beef and we love to used all of the animal ❤ it is a way of saying thank you, as respect to them❤ we have so many Hispanic, Mexican friends /family that we cook with and have taught us what to cook in as far as outside in a copper pot and cooking a whole pig and not wasting anything❤ so much respect for different cultures teaching how we all used to live❤❤❤
  • I cooked my tongue for 80 minute and a natural release for 10. JUST INCREDIBLE! Fork tender, greasy moist, tasty and totally worth it. When making tacos, don't make the mistake I did with adding all kinds of toppings. Let the lengua take center stage: use onions, sauce, cilantro and lime. That's it! It will be beautiful.

  • When my Dad butchered our beef we had tongue often. My Mom would simmer it on the stove, then cut it into pieces and grind it. She would then mix with mayo (also homemade) pickles (homemade too) and onions, then add spices. This would be our families lunch meat for several days. It tasted ok, but I really liked it when she fried up the heart. So good.

    I Love Lingua,My late husband was from Meoqui Chichwawa MX.He showed me how to cook Lingua,We use onion and Garlic Clove in it while it cooks,He taught me to cook Authentic Enchaladas and Tamales,Pork and Chili
  • When my boys were 5 & 7, I bought a lengua. The older son got a hold of the lengua and chased the younger brother trying to lick him with the lengua. He's 23 and still traumatized by lengua

    Mom would make Beef and Lamb tongue. I'm the only one in my home who admits to enjoying Lengua but everyone has accidentally eaten one of my Lengua tacos and enjoyed them. At 61 I'm finally going to make Lengua following your recipe using our instant pot.

    Tongue was never cooked at my house and this is the first time I have ever seen it cooked. I did not know it was so easy. I have had tongue stew/soup at a basque restaurant and it was delicious. Once you get over the ick factor this is going to be a treat.
