Japanese Marinated Eggplant Recipe

This is a simple recipe for a Japanese marinated eggplant. Loaded with Asian flavor, and it gets better for everyday it stays in the cooler.

My Japanese wife and I always make it at home. It's a great side dish to go with almost anything. Or we even eat it as the main with a bowl of rice.

Recipe:
3 Chinese eggplant
3 Tablespoon soy sauce
3 Tablespoon mirin
2 Tablespoon rice vinegar
1.5 Tablespoon sugar
1 Tablespoon sesame oil
1 Teaspoon chopped garlic
1 Teaspoon chopped ginger
2 sliced green onion

    This dish is amazing. It's a staple in my kitchen now for sure. One suggestion, it needs a bit of. spice. I threw a couple chilis in there. The sweet and spicy is a good mix.

    can you confirm if its 3 tablespoon of soy sauce and three tablespoon of mirin? You got way more sauce than those portions.
