Delicious and creamy baked potato with mushrooms! Healthy and simple!

Ingredients and recipe:
3 medium sized potatoes
Sausage 150g
Mushroom 250g
Butter
Salt & Pepper
Oregano (1 tsp)
Paprika (1 tsp)
Parmesan cheese

Peel and thinly slice the potatoes
Bring a pot of water to a boil, add salt
Add in the potatoes and boil for 3 mins, remove and set aside
Thinly slice the sausage
Thinly slice the mushroom
Heat up a pan in medium heat
Add vegetable oil
Add in the mushrooms and cook for 1 minute
Add butter, salt & pepper to taste
Continue to cook for 3 mins
Cover the bottom of a baking tray with butter
Add a layer of potatoes
Season with black pepper, oregano, paprika,
Add a layer of mushrooms, followed by a layer of sausages, finish with a layer of potatoes
Cover the top with parmesan cheese
Bake for 30 mins at 350F

  • This is great! Thanks for sharing. But I think that you need to re-label it as a Sausage, Potato and Mushroom Casserole and eliminate the reference to "baked potato". I do not see any use of a baked potato in this video! Am I missing something? I make a similar recipe and I add fresh, finely diced garlic to it, because I cannot even think of sauteing mushroom without first flavoring the oil and butter with fresh garlic! BTW, you might want to consider adding some specificity to your ingredients. For example, specify the type of potato and the type of mushroom and the type of paprika that you used in your recipe (there are so many varieties to choose from!) I would suggest the use of a Yukon Gold Potato, Cremini Mushrooms, and a Smoked Paprika blend, (because of the sausage!) And I suggest that you mention the type of sausage that you used (there are so many!). I like using a Premio brand of Chorizo Sausage (very spicy and not for everyone!), but any brand of Smoked Sausage will work, IMO! I also frequently add slices of white (sweet) onion and slices of green and red bell peppers for added color and crunch! (Again, maybe not for everyone, especially if you are anti-Italian! LOL!) One last suggestion- about the potatoes! Expect lots of discussion regarding your method of preparation. In your video you boil thin slices of potato in salted boiling water for only 3 minutes. Me thinks this is not nearly enough time if you want the potatoes to get crispy during the bake. Otherwise, they get soggy, IMO!. . Happy Cooking!
