This is far from an authentic enchilada but you know how I like to be creative... responsibly creative. 🤣 This was a fun and incredibly delicious dish! I hope you give it a shot!

I have to get better about typing the ingredients and measurements in the description. I'm very intuitive when it comes to cooking and I'm not used to taking measurements, so I never remember them! LOL I'm sorry, I will get better with this part.

I know you are spending some good money on buying food and, I know it's worth it for the outcome you get when you cook your own healthy meals and you use fresh and healthy ingredients. I am not buying clothes right now so I will put that money to good use by buying some new herbs for my pantry
