banana cream pie parfait recipe (using girl scout cookies)

Banana Cream Pie Parfaits (using trefoils or do-si-dos)
Episode 4 of my “What the **** to do with all of these Girl Scout cookies" series.

If you’re not a fan of bananas, try this with strawberries or even canned peach pie filling! I have a suspicion this would work nicely with chocolate ganache (I’m thinking Boston creme pie..)

Ingredients:
* 1 BOX (9 OZ) SHORTBREAD COOKIES (TREFOILS) OR PEANUT BUTTER SANDWICH COOKIES (DO-SI-DOS)
* 4 TABLESPOONS BUTTER (56.7 grams)
* 1/4 TEASPOON SALT (plus two pinches) (1.5 grams)
* 1 BOX INSTANT VANILLA PUDDING MIX (5.1 OZ)
* 1 & 1/2 CUPS HEAVY CREAM (COLD) (355.5 mL)
* 1/2 CUP MILK (COLD) (118.5 mL)
* 2-3 RIPE BANANAS
* WHIPPED CREAM OR COOL WHIP FOR TOPPING
* OPTIONAL: BANANA CHIPS FOR DECORATION/INDICATION


Instructions:

1. Use a food processor to crush short bread or peanut butter cookies until finely ground

2. Add cookie crumbs, melted butter and salt in a medium mixing bowl and stir until combined. Set crumb mixture aside.

3. Distribute the crumb mixture evenly into your serving dishes.

4. In a large bowl, combine your vanilla pudding mix, heavy cream, and milk. Whip until thick and fluffy, scraping the bowl down halfway. Add 2 pinches of salt. Whip to incorporate.
5. Cut bananas into 1/4 inch thick slices. Place one slice of banana into each mini cup. Or spread bananas on top of your crumb layer if you’re making a larger trifle.
6. Add your pastry cream on top. Try to completely cover the banana slices so they don’t get any air and they won’t brown.
7. Top with cool whip or stabilized whipped cream. And add a banana chip on top!
8. Enjoy
