Welcome back! You're gonna get a lot more out of those farms, if you add trapdoors around the composters, so that they basically form a ring around it. That way, the villagers can't compost excess food (which they will) and drop more on the ground for the minecart to pick up. The Trapdoors allow them to still pathfind to the composter so they keep their profession, but they can't reach it anymore so they can't compost the excess food.
