You've been on fire this season! Crazy idea for the transition between "legs": what about extending the train by a few more cars and having the frontmost car falling into a sinkhole. Players could exit downward through the front of the damaged train into the water section.

At the end of the tunnel, what about another station stop, but it’s one of those that are abandoned and shut down. So, then you can block off doors and possibly add some more obstacles to pass before turning around (over the stairs to the other side?) and going back the other direction to finish the race.

Have you considered catapulting the pig down onto a slime block landing pad? If you do it in a confined space with another one in the ceiling you could bounce for ages.
