Clinton Palanca, the Philippine's premier food critic, gives us his professional opinion on what makes a good restaurant.

Clinton Palanca is the Philippine’s premier food writer with his work published in the Philippines Daily Inquirer and Esquire Magazine. He is also the award winning author of My Angkong’s Noodles and The Gullet: Dispatches on Philippine Food. He attended Ateneo de Manila University, has an MSc in Sociology from Oxford University, and a Doctorate in Food Anthropology from SOAS University of London.

    HAY KASAYANG ni Clinton, so young to depart forever. Since having a family di na ako makabili ng newspaper thus I lost track of Clinton's food writings/columns. But what I remember is that he was fated to be malusog, more so when he was just starting out as a literature writer. I'd assumed na galing siya sa talagang mayamang pamilia and could truly afford what he eats and critiques, and has no need to work a bread & butter job because he was born with a golden spoon, thus he could write in peace without the existential "threat" of ending up hungry. One time sumulat siya about having ordinary instant noodles turned into a decent meal when he went home very late. With all the gourmet ingredients on his fridge, we finished reading his piece with the idea that the so-so noodles ended up being a ramen, with Clinton's touch. This is one guy I feel envious because though he was conspicuously from old wealth, he didn't ended up a brat, spoiled, mentally-challenged bum but was highly educated, and very brainy. No, he felt being an Ivy Leaguer in Massachusettes has become unfashionable that he went to England to prove a Pinoy can also cut it out. I wished the oligarch-owned, tax-dodging paper he was writing for upon his death will published a collection of his columns, thats a most welcomed memorial for the late great Clinton....
