Gullah Geechee Red Rice

Ingredients;

4 cups of Parboiled Rice
4 cups of water or chicken broth
1 12oz can of Tomato Paste
1 Small Onion
1 Small Green Bell Pepper
2 - 4 Sausage Links
Seasonings of choice
3 Tbsp of sugar (optional)

Directions

1. Add sausages, bell pepper and onions to a skillet with some vegetable oil.
2. Let cook until sausage is slightly brown and vegetables are slightly tender.
3. Add tomato paste and allow to cook for 3 - 5 minutes.
4. After 3 -5 minutes, transfer to a baking pan and add rice and liquid.
5. Season with your favorite seasonings to taste. If the taste is too acidic, add the 3 Tbsp of sugar.
6. Cover with foil and bake on 350 for 1 hour and 20 minutes. Checking after an hour. If rice still seems undone, cover and place back in the oven for the remaining 20 minutes.
7. Once done, give a good mix and serve while hot. Enjoy!

  • I'm from the low country and my best friend taught me how to make red rice over the phone maybe two years ago. It came out delicious; so much so that my brother asked me to make some for his work potluck. One bite and his coworkers couldn't believe "his brother" made it. He explained that it's a dish he grew up on. They ate it all. Now, every time they have a potluck; he asks me to make it. No problem. The dish is good.

    Being from Charleston I remember my Granny & Mom making this and Macaroni Pie to go with fried chicken! Ain’t nothing better! Gonna use your recipe as I like sausage in only cut in halves or quarters better than whole rounds. Now gotta locate a good macaroni pie recipe.

    My parents use to make this every. Thanksgiving. My mother would add corn. She prepared hers on the stove top. I never can get it right, always came out soupy. But I tried your recipe on Thanksgiving this year 2023, AMAZING! THANK YOU! The oven aspect is generous, love, love, love it.
