Loaded Baked Potato soup

8-10 peeled and diced russet potatoes
1 onion diced
1 sticks of butter
1tbs flour
8 cups chicken stock
16 oz sour cream
1 pound bacon fried and chopped , save drippings
3 cups cheddar cheese
Tsp each (or more to taste) Salt, Pepper, seasoned salt

Add bacon to a pot and fry until almost crisp. Remove leaving drippings behind. Add butter to drippings and melt on medium/ high heat. Add onions and cook til translucent. Add flour and stir for 2-3 minutes. Add potatoes and stir. Then add stock. Lower heat to medium and cook until potatoes are starting to soften. About 30 minutes. Stir occasionally. Once potatoes soften start gently mashing against the side of the pot. Or use an immersion blender. Leave some chunks though. Add sour cream, bacon, cheddar cheese, and stir til cheese is melted. Add seasoning to taste. I like a lot of pepper. Almost an obnoxious amount lol. When you serve....top with shredded cheese and a little reserved bacon.

    That looks good. What is recommended to use besides bacon? My son does not like the texture of (any type of} bacon and I am allergic to pork.
