Traditional Nahari (Nihari) Recipe
Ingredients
• 4 Beef Shanks
• 4 – 5 medium to large size yellow onions thinly sliced
• 3 nutmegs (Jaifal)
• 4 pieces of Mace (Javitri)
• 3 medium size dry ginger pieces
• 2 tbsps. Fennel seeds
• 2 tbsps. Cumin seeds
• 8-10 Cloves
• 3 small size cinnamon sticks
• 15-20 black peppercorns
• 8 black Cardamoms
• 10-14 green Cardamoms
• 3-4 Bay leaves
• 2 tbsps. Kashmiri red pepper (as per your taste)
• Salt (as per your taste)
• 1 tbsps. Turmeric powder
• 5 tbsps. Fresh ginger and garlic paste
• 6 tbsps. Lightly roasted chickpea flour
• Oil enough for frying the onions and cooking the meat
• Flour dough to seal the pot (optional)
• Water – enough to cook the meat

Garnishing Tray:
• Fried onions
• Chopped green chillies, ginger and cilantro
• Lime or lemon slices
Enjoy with tandoori naan!
