What could be more perfect than these Bacon and Egg Toast Cups. In a single muffin cup you have a brown and crispy slice of bread, that is filled with a slice of bacon, some cheese, a sprinkling of green onion (chives), and a perfectly cooked sunny side up egg. While you can serve them on a plate to be eaten with a knife and fork, they can also be eaten as finger food.

    I made this for breakfast this morning...Yummy !!! I made my own bread in a bread maker last night and I had bacon that I had prepped for other recipes and as I was looking in the refrigerator this morning I happened to have spinach, cheddar, parmesan, shallots, home made bread, butter and eggs. I said wow I have all the stuff for these breakfast toast cups. It must have been my subconscious mind. I even have a an oversized muffin dish. 😀 Another great and easy recipe. Thanks so Much !!

  • Stephanie...thank you so much for this recipe. I am absolutely trying this for my husband! I will be using regular bacon and making him 3. He loves poached eggs and I think this is a similar presentation, with the toast & bacon included. What a treat!

  • Thank you for yummy quick ideas, my kids will enjoy these on the rush to get to bus stop, school, and jobs, etc. Might try for my daughter's birthday party, as a finger food , maybe with sliders, or cheese rolls, cupcakes with fingers and eyeballs since it's too close to Halloween, have teens and adults both to feed. These will be easier to take wherever we end up going to have her party.

  • I tried this yesterday for a late breakfast. I NAILED IT. Well, aside from burning my turkey bacon that is. And I loved it. It was great with lettuce salad and a cup of cocoa.     There is a much easier way to do the cups. Make four slices in the middle of each side of the square side about an inch in. Leaving the center of the bread intact. Then when you place them in the cups, you just take each square you created and arrange/fold them around the edge to make the cup (there will be overlap, that's fine and part of the idea of making the cup).
