    OK I dared to modify the recipe a bit. Instead of boiling the cauliflower I steamed it. Takes a bit longer but you have much more control over the donness. Steamed in a pot over a steaming basket it took mine 7 minutes to be perfectly cooked. And guess what, more flavour remains in the cauliflower, and not passing into the boiling water.

    Great recipe! When I make roasted cauliflower, Instead of boiling, I steam the florets in the pressure cooker (just a tiny bit of water at the ground of the pot) for 5 minutes. That way I lose fewer nutrients and I think the texture is also firmer (which I like more) than when cooked in water.

    I learned to make this when I lived in Madrid, but it was backwards from how you do it. The raw cauliflower was sautéed in the garlic oil until it was a little browned & then a little water was added & you put the lid on to steam it until done. The idea was to use just the right amount of water so it was done just as the water was gone & you got a little sauce for it. It is delicious! ajo ajo ajo!!!!!!!

    8/18/23: I have never liked cauliflower, but I tried this recipe only 'cause my church gave me one, and I have to admit that I enjoyed it a lot and would eat it this way again. TFS!

    On my (the opposite) side of Europe cauliflower is usually boiled soft, sometimes even mushy, and served with bread crumbs fried in butter on top. Of the concoction, only the bread crumbs taste good, and the rest smells bad, giving everyone a lifelong hate of cauliflower. Around the Mediterranean, however, people serve cauliflower fried and it tastes great. I will try out this recipe today for afternoon snack and I bet it will be a hit!

    Thank you. I'm looking forward to trying this. I love cauliflower. FYI Another spice that is great with cauliflower is curry. When I serve raw cauliflower, I make a dip with mayo, sour cream, a little onion powder and garlic powder and curry powder. YUM!
