    They probably cook the pork, cool it down in the fridge so it retains its shape, then go through the frying steps to maintain that beautiful look. Insanely jealous

    For pork this thick, I think they cook it first sous-vide (vacuum seared immersion) and then katsu fried it. Sous-vide is a popular restaurant technique nowadays.
