deep fried girl scout tagalong cookies recipe (+ the secret to avoid exploding chocolate)

Episode 3 in my “What the **** to do with all of these Girl Scout cookies series”

This is a super simple recipe for deep fried cookies (which is a nice twist on deep fried Oreos, because…melted chocolate…and melted peanut butter!!) but what’s important here is the technique. Be sure to watch the whole video for some really helpful deep-frying tips!

Ingredients:
1& 1/2 cups pancake mix (204 grams)
3/4 cup water (177 mL)
Tagalong Cookies (peanut butter patties) FROZEN
(^thin mints work really nicely too!)
Powdered sugar for dusting
Vegetable oil for frying

Original method:
1. Start by preparing your pancake batter, using the measurements for about 6-10 pancakes.
2. Let the pancake batter rest for about 5 minutes to thicken.

3. Then set up your frying station. I like to use a small saucepan to fry these, so I don’t need to fill up a pot with a bunch of oil. Clip on a candy thermometer if you have one, and aim to keep your oil between 350- 375 degrees F (176 C - 191C). If you don’t have a candy thermometer, the oil is ready when you dip a wooden spoon in and the oil immediately bubbles around it. Next to the pot of oil, I like to line a baking sheet with brown paper bags, or you can use a baking rack to drain the excess oil .

4. Take the frozen cookies and do your best to completely cover them with the pancake batter.

5. Carefully place the batter dipped cookies in the oil, and fry until golden brown, turning the cookies as needed.
6. Top with powdered sugar, and serve warm

Freeze-first method:
1. Place a spoon full of pancake batter in the bottom of cupcake liners.
2. Partially submerge the cookies in the batter.
3. Then, top the cookies off with more pancake batter.
4. Put these in the freezer until completely firm.
5. Preheat your oven to 375F (191 degrees C, or, get your air fryer ready, set to 400 F, 204 C )
6. Once cookies are frozen, you can remove the cupcake liners, and deep fry them in the oil. Because the batter is frozen solid around the cookie, the chocolate won’t melt out. But the batter inside still needs to cook a little.
7. Once you’ve fried all of your cookies until they’re golden brown, place on a cookie sheet and bake for 8 minutes at 375 F (191 C), or place in your air fryer and cook at 400 degrees F (204 C) for 5 minutes
8. Top with powdered sugar and serve warm
