easy lemon cookie fruit tart recipe (girl scout cookie recipe)

don’t get me wrong. i LOVE the girl scouts. i LOVE the cookies. and i LOVE all of the things that the GS cookie program teaches young girls. so that’s why i’ve literally purchased boxes from every girl scout i know! (i've made donation purchases too!). but a girl can only eat so many cookies! so i’m headed to the kitchen to transform these cookies into different delights!

RECIPE:
Lemonade fruit tart

Ingredients:Tart Shell:
1 package of Girl Scout Lemonades (or Lemon-Ups) (6.2 oz / 176 g)
½ stick (4 tablespoons) butter (2 oz / 56.7 grams)
A pinch of salt

filling:
1 block ROOM TEMPERATURE cream cheese (8 oz / 226 grams)
⅓ cup sour cream (2.6 oz / 74 grams)
1/2 tub whipped topping  (cool whip, 4 oz / 113 grams)) 
¼-½ cup of sugar (*to taste) (1.78 oz - 3.55 oz / 50-100 grams)
1 teaspoon vanilla extract (0.167 fl oz or 5 mL)
1/2 teaspoon lemon zest**
1 teaspoon lemon juice**

Top:
Various berries & fruit
Edible flowers (optional)
Gold leaf (optional)
Apricot jam (optional, for glazing the fruit)
Confectioner’s sugar (optional, for a snowy effect)
Melted chocolate (optional, for drizzling)

*I like desserts less sweet, so I add less sugar
**I like to zest an entire lemon before juicing it. Add as much lemon zest to the tart filling as you’d like.

Directions:
1. Preheat your oven to 350 degrees F, (176 C)
2. Crush cookies using a food processor or blender until you get fine crumbs.
3. Add the melted butter and salt to the cookie crumbs and stir until combined
4. Using your hands, press the crumbs into your 9 inch tart pan. If you don’t have a tart pan, you can use a springform pan or pie pan. I like to use a spoon at the end to help me compress the crumbs even more
5. Bake the crust at 350 for 8-10 minutes, or until golden brown. If you would like to make this a no-bake tart, you can freeze the crust instead of baking it.
6. Place the room temperature cream cheese and sugar in a bowl. The cream cheese MUST be room temperature for a smooth filling! Use a hand mixer or stand mixer to cream the ingredients together until the sugar is well incorporated. This will take some time, but is a very important step to ensure there will be no lumps in your filling.
7. Once the sugar is no longer visible, add the sour cream, 1/3 of the cool whip, vanilla extract, lemon zest and lemon juice. Beat together until fully combined.
8. Then use a rubber spatula to fold in the rest of the cool whip into the mixture.
9. Once the tart shell is fully cooled, pour the filling into the shell and spread evenly, using an offset spatula or the back of a spoon.
10. Decorate with fruit!
