그라이데이션된 색감이 아름다운 딸기 치즈케이크를 만들었어요~
치즈케이크 반죽에 딸기 퓌레를 넣어 전체적으로 딸기 맛이 나서 정말 상큼하고 맛있답니다.
연한 색부터 한 층씩 쌓아 굳히기만 하면 돼서 간단하게 만들 수 있더라구요.
생각보다 만들기가 쉬워서 어렵지 않게 만드실 수 있으실 것 같아요.
윗면에 작게 자른 딸기와 반으로 자른 딸기를 섞어 올려 더 풍성한 딸기 느낌이 나도록 해봤어요.

▶틀 사이즈 Mold size : 15cm x 7cm

▶재료

딸기 250g
설탕 50g
레몬즙 5g

부순 다이제 쿠키 80g
녹인 무염버터 35g

판젤라틴 7g
크림치즈 350g
설탕 50g
바닐라익스트랙 3g
레몬즙 7g
생크림 200g
빨간색 식용색소

▶레시피

1. 냄비에 딸기와 설탕을 넣고 걸쭉해질 때까지 저으며 끓이다가 레몬즙을 넣고 섞은 뒤 체에 걸러 다른 볼에 담고 식힌다.
2. 부순 다이제 쿠키에 녹인 무염버터를 넣고 섞고 15cm 틀에 넣고 평평하게 눌러 모양을 잡은 뒤 냉장실에 넣어둔다.
3. 차가운 물에 판젤라틴을 1장씩 넣고 약 15분 정도 불린다.
4. 실온에 두어 말랑해진 크림치즈를 부드럽게 풀고 설탕, 바닐라익스트랙을 넣고 섞은 뒤 레몬즙을 넣고 섞는다.
5. 판젤라틴의 물기를 짜고 전자레인지에 15초 정도 돌려 완전히 녹여 넣고 섞은 뒤 식힌 딸기 퓌레를 넣고 섞는다.
6. 생크림을 뿔이 올라오기 시작하는 정도로 묽게 휘핑한 뒤 치즈케이크 반죽에 넣고 섞는다.
7. 틀에 반죽을 1/5 정도(약 140g) 붓고 평평히 한 뒤 냉동실에서 15분 정도 굳히고 남은 반죽에 빨간 식용색소를 조금 넣고 섞어 색을 낸다.
8. 굳은 치즈케이크 위에 남은 치즈케이크 반죽 1/4정도를 붓고 평평히 한 뒤 냉동실에서 15분 정도 굳힌다.
9. 반복해 진한 색으로 치즈케이크를 굳히고 마지막 반죽을 붓고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.
10. 스팀타월로 틀을 감싸 살짝 녹인 뒤 틀을 제거하고 옆면을 매끄럽게 정리하고 윗면에 딸기를 올려 장식한다.

80g Crushed digestive cookies
35g Melted unsalted butter

7g Gelatin
350g Cream cheese
50g Sugar
3g Vanilla extract
7g Lemon juice
200g Heavy cream
Red food coloring

    Just made this cake for my sisters birthday. She wanted a strawberry cheesecake and so I stumbled on this recipe. I did have a few hiccups because I didn't have quite the right tools and didn't want to buy new ones just for one cake, but it still turned out great. And more importantly it tasted great as well. Would make it again sometime

    My advice for you guys if you try it for the first time. Don't over-whip the cream, otherwise the whole filling will be too thick and the layers will be uneven. It is better to under-whip the cream a little, it will still thicken. Hope it'll prevent someone from my mistake. P.S. sorry for eng, I'm not native 😄 Edit: the cake went very delicious, with a delicate texture and a soft taste of yoghurt

    For all English speakers Add 250g strawberry and 50g sugar into a pot and boil on low heat until disintegrated Add 5g lemon juice and stir Strain into a bowl and chill Mix 80g crushed biscuits and 35g melted butter together in a bowl and press into mold Chill in the refrigerator Soak 7g gelatine in cold water for 15 min Mix 350g cream cheese, 50g sugar and 3g vanilla extract until combined Add 7g lemon juice and mix Remove gelatine from cold water, strain and microwave for 15 seconds Add to cream cheese mixture and mix well Add strawberry purée and mix until combined Whip 200g heavy cream Add to mixture and stir well Add 1/5 of mixture to the mold and freeze Add food colouring to next 1/5 of mixture, pour into the mold and freeze Continue until last layer and refrigerate for 2 hours Remove from mold and decorate

    I wanted to try a new recipe so I decided to make this! I halved the recipe for two small pans and made one with a raspberry/blackberry puree and the other with strawberry, it was a little chunky and not as smooth as in the video but still turned out well, it's also a bit sour so this would be perfect for those that don't particularly like sweets! 감사합니다 쿠킹트리 씨!

    I made this over the Easter weekend and everybody was extremely impressed! It looks sooo pretty, even got the decoration on top on point. The taste is actually amazing, to me it tastes a little like a bowl of strawberries with whipping cream... Delicious. I doubled the recipe to fill a larger mold and used powdered gelatin since we don't have those sheet ones here (for the double recipe, I used 2 packets of 7g). I actually found this pretty easy to make. I didn't use a paper in the bottom of the mold and I would use one if I made it again. Great recipe, thank you!
