Tiny Jefferson hamburger stand has huge following

Published 2022-07-21
Downtown Jefferson is filled with small, locally owned businesses, and perhaps the smallest of them all can be found on the corner of Racine and Center streets. At just eight feet by eight feet, Wedl's Hamburger Stand is 64 square feet of hamburger heaven.

With those thin patties, you need a quadruple to taste anything.

  • I'm 60 yr old feller from Kentucky & we fried/ & still fry most everything in lard or rendered bacon fat, beef fat is good for sliced potatoes also, I am not a big fan of McD's but their fries were much better yrs ago when deep fried in lard

That story about the grill is so unique, thats the thing with some food joints theyll have an old grill thatll be better then modern ones, especially for old-school recipes like an 1/8th pound grinded patty on a grill

800 Patties from 100 pounds of Meat means a 2 ounce Burger & at 10 minutes to cook ?... Doesn't sound too thrilling to me.

grey anemic burger cooked on a malfunctioning 100 year old grill no where near hot enough! Yummy!
  • Why’s there no sizzle from that grill? Meat looks grey, turn the dan heat up and get some crisp on those edges ! Looks terrible

My brain 🧠 says they are using less fat content in the patties for them to be that thin and not have holes in them. The temp is relatively low. So good quality meat and a blend of cuts with less fat than 80/20 is my guess.

The only thing missing is Old Yeller eating a dry biscuit.
