2 large can of tomato sauce
1 can petit diced tomatoes
3 chicken breasts cut in half
Salt, pepper, garlic powder tsp each
2 tbs Italian seasoning
1 tbs Dried basil
Pepperoni
Shredded mozzarella
1/2 cup grated Parmesan
One pound pasta of choice-prepared.
Mix sauce, tomatoes and seasonings and pour into a casserole dish and stir. Nestle chicken on the sauce. Season the top of the chicken with salt and pepper. Top with pepperoni slices and mozzarella. Sprinkle dried basil and 1/2 cup grated Parmesan. Bake until bubbly and chicken is done. Serve chicken with pasta sauce and pasta of choice.
This can be prepped the morning of and refrigerated until time to bake:)
Vegetable Beef Soup
8 cups water
3tbs beef bullion base
1 1/2 cooked hamburger meat
1 can sliced carrots
1 can corn
1 can green beans
2 cans white beans
2 cans diced tomatoes
1 tbs onion powder
1tbs pepper
1tbs kosher salt
2 tbs parsley
1 lb tiny pasta (Ditalini or Mini tubetini)
Shredded Mozzarella for serving
Add water, beef and bullion to a pot. Bring to a boil. Add cans, liquids and all to the pot along with seasonings. Return to a boil. Add pasta and cook an additional 10 minutes stirring occasionally. Taste to make sure there’s enough salt per your preferences. Serve topped with shredded mozzarella.
Chicken and Cream Sauce Bake
10 chicken tenderloins
1 can cream of chicken soup
1 cup sour cream
1.5 tsp salt, pepper, Toni’s seasoning
1.5 cups shredded cheddar cheese
2tbs melted butter
1 cup Italian Panko bread crumbs
Preheat oven to 400. I’m a casserole dishes lay your tenderloin out. Season with salt, pepper, Toni’s. I’m a bowl combine soup and sour cream. Spread over seasoned chicken. Top with cheese. I’m a small bowl combine butter and panko….sprinkle on top of cheese chicken mixture. Cover with foil bake 30 mins…..remove foil bake another 15-20. Let rest 10 minutes. Serve over rice.
quinoa instant pot
2 cups of white rice
6 tablespoons tricolor quinoa
4 cups of water
Tablespoon of salt
Tablespoon of butter
Set instant pot on rice button to cook and then release the seal when time is up. Or sit to Manuel high for three minutes and do a slow natural release of at least 10 minutes.
