Cauliflower Pizza Casserole Diabetic friendly week #easymeals

1 large head of cauliflower (cut into small florets)
2 tbsp olive oil
1 (24oz) jar marinara sauce
2 cups shredded mozzarella cheese
salt, pepper, garlic powder, & Italian seasoning to taste
pepperoni (or toppings of choice)
Instructions
Preheat oven to 425 degrees.
Place the cauliflower in a 9x13 baking dish and toss with olive oil, salt, pepper, and garlic powder.
Arrange the cauliflower into a single layer on the bottom of your dish; bake for 20-25 minutes or until the cauliflower starts to turn slightly brown.
Remove the cauliflower from the oven and evenly spoon the marinara sauce over top. Sprinkle with shredded cheese and Italian seasoning.
Top with pepperoni and any other optional toppings of your choice.
Place the casserole back into the oven for 12-15 minutes or until the cheese is melted and golden.

  • Never thought of this. My ingredients will be different for dietary 13:22 reasons, but I really like this. Think i may due cooked hamburger, mushrooms and maybe onion and green peppers.

    Aldi‘s has an amazing cauliflower crust pizza. It’s the only one I’ve ever tried that I actually like. And I only say that as an option. When I would cook for my father I use cauliflower a lot. I would make cauliflower mashed potatoes. Cauliflower rice casseroles. I would make twice baked potatoes and use 1/4 potato and 3/4 cauliflower and add in all that good stuff and he could never even tell that it was actually cauliflower. It’s such an amazing replacement I think.

  • We have a Trader Joe's here but they are expensive to me. And since it's on the opposite side of town it's not worth going to. I love cauliflower 😋 looks so yummy. Blessings dear friend ❤
  • The TJ's here in our County, is pretty compact. I think they pack more in the small space because they have less sugar packed sodas and candies and cookies. They have some but they're specialty. My mom adores the peanut butter cups they sell.
  • This looks really good! Cauliflower doesn't change the taste but sure does change the calories! We have 2 Trader Joes close to us in Houston- both are small and always busy! There are a few things that I like to purchase from there but it's not my usual shopping spot. Thanks for sharing! Hugs!
